Warm Kale, Bacon and Walnut Salad

 

 

 

 

Serves 6

Ingredients:
1 cup chopped walnuts
3 thick-cut bacon slices
1/2 small red onion, thinly sliced
1 large bunch of kale, stalks trimmed, leaves torn or chopped
2 tablespoons apple cider vinegar
Salt and freshly ground black pepper to taste

Directions:
1. Over medium heat, toast walnuts, stirring often, just until fragrant. Remove walnuts and set them aside to cool.

2. Cook the bacon, turning occasionally, until bacon is crisp. Use tongs to transfer bacon to a paper-towel lined plate to drain. When cool enough to handle, crumble bacon.

3. Transfer 1 to 2 tablespoons of bacon fat from the oven tray to a frying pan and add onion. Cook, stirring often, until softened. Add kale and cook, stirring often, until kale is wilted and tender.

4. Stir in vinegar and season with salt and pepper. Cook for 1 to 2 more minutes then transfer to a serving platter. Sprinkle with walnuts and bacon. Serve warm.
