Chilli & Lime Chicken

 

 

 

 

Serves 6.

3 tablespoons chilli powder
•2 tablespoons extra-virgin olive oil
•2 teaspoons freshly grated lime zest
•3 tablespoons lime juice
•1 tablespoon minced garlic
•1 teaspoon ground coriander
•1 teaspoon ground cumin
•1 teaspoon dried oregano
•1.5 teaspoons salt
•1 teaspoon freshly ground pepper
•Pinch of ground cinnamon
•5 or 6 chicken breasts
 
1.COMBINE CHILLI POWDER (OR PAPRIKA) AND OIL IN A SMALL BOWL WITH LIME ZEST AND JUICE, GARLIC, CORIANDER, CUMIN, OREGANO, SALT, PEPPER AND CINNAMON TO FORM A WET PASTE.
2.COVER THE CHICKEN BREASTS WITH THE PASTE. (FOR BEST RESULTS, LEAVE THEM IN THE FRIDGE OVER NIGHT TO MARINADE).
3. PREHEAT THE GRILL TO MEDIUM-HIGH.
4.LEAVE ALL THE SPICE RUB ON THE CHICKEN. PLACE THE CHICKEN OVER THE HEAT AND GRILL UNTIL IT BEGINS TO COLOR AND CHAR MARKS FORM, ABOUT 5 MINUTES. FLIP OVER AND GRILL 5 MINUTES MORE. KEEP FLIPPING THE CHICKEN UNTIL IT IS THOROUGHLY COOKED ALL THE WAY THROUGH.
5.ONCE COOKED SERVE ON A BED OF FRESH SALAD.
