Recipe – Healthy(ish) Pancakes

For the Batter Mixture:
4oz wholemeal flour
1 egg
Half a pint of skimmed milk
1 tsp Splenda Granulated Sweetener
Method
Put flour into basin and make a well in the middle.
Put egg in well, and stir in the flour, adding milk to make a smooth paste.
Beat thoroughly to ensure the mixture is smooth and lump-free.
Add the remaining milk and stir in the sweetener
Using a non-stick frying pan with a dash of oil, pour in enough batter to coat the base of the pan.
When the underside is brown, toss the pancake, or use a spatula to turn it over and cook on the other side.
Toppings
1 – Chopped banana and crushed almonds
2 – Fresh blueberries and natural yogurt
3 – Natural Yogurt and fresh berries (blueberries, strawberries, raspberries)
4 – Cinnamon pancakes (add 2tbspns of cinnamon in the batter mixture) and top with natural yogurt and finely chopped apple
5 – Chocolate Protein Pancakes (add 2 scoops of protein powder to your pancake batter mix) and top with chopped banana and crushed cashew nuts
